Spicy Buffalo Wings
Feb 12th, 2010 by Paul
Had a craving for some buffalo wings over the last few days so I decided to whip some up.
For the sauce I heated 1/3 cup of butter with 1/2 cup hot sauce and stirred through some garlic powder, onion powder, and ginger as well as some extra Cayenne pepper to up the heat a little. I also added a little Glucomannan Powder to thicken, but most people would not bother, or use corn flour.
The chicken wings were simple, I just seperated the wings into their three pieces, chucked the tips in the freezer for stock later and the rest into a bowl with some salt and pepper.
Heated up some vegetable oil and fried the wings until cooked through and crispy on the outside. Went into a warm oven to keep hot. When ready to serve I put both wings and sauce into a large mixing bowl and mixed to coat.
While I had the hot oil I blanched some asparagus in it.
I served it with a aoili made from mayonaise (kewpie), seeded mustard and a few drops of lemon juice. Oh and the traditional celery sticks.
