I was at work on Saturday when I hear a voice from across the room “Hey Paul, do you want some ducks ?”. A rather strange question to hear at work, but of course I immediately said yes. Turns out the guy had gone out for a quick hunt before work. I headed on out [...]

With friends coming over for dinner and a moderate weather forecast for today it was an obvious choice to do some barbecue. Due to the extreme summer ( 60 days of 100f/38c or higher ) its hard to get motivated to go stand out in the sun. Usually I spend a lot of time thinking [...]

Just a few short weeks ago my attention was drawn to a sandwich known as the Shooter’s Sandwich. It’s a very old British recipe from the Edwardian era designed to be carried by the gentleman hunter to have a good wholesome portable meal while hunting. In fact it’s almost a portable Beef Wellington. The sandwich [...]

Cassoulet is a fairly epic dish that many home cooks shy away from because it requires a lot of time, some recipes call for 3 days of preperation/cooking. It’s a peasant dish and they were too busy working to be cooking for three days straight. I’ll guarantee they worked a lot harder for longer hours [...]

I’ve been wanting to make Pastrami for quite some time, I used to make it by getting pre-brined packages of corned beef and smoking it but I’ve never made it from scratch before. Thankfully I have my copy of the Bible and a recipe was only a few page turns away. I didn’t want to [...]

There’s a reasonably new supermarket chain nearby called Sprouts Farmer’s Markets. It’s nice and close to our house and has some nice fresh produce and importantly cheap wine that doesn’t suck ( $10 for 3 bottles! ). In the Meat section I saw that they had some Grass Fed Beef steaks. I grabbed a couple [...]

I’ve been cooking Ghetto Sous Vide for quite some time now, using a thermometer and various cooking vessels turned down low. This was fine for cooking stuff for a few hours, but I have been yearning to get a bit more serious with the Sous Vide. I checked out the Sous Vide Supreme but with [...]

I love Thai food, but have had a real hard time finding good Thai in Austin ( Although I’m told Thai Fresh downtown is excellent ). I finally decided that if I was going to have good Thai I’d have make it myself and spent the last few weeks on the lookout for shrimp paste, [...]

One thing that really annoys me about living in Austin is the lack of a really good butcher. Don’t get me wrong there’s a few good places to buy quality meat ( Central Market, Wholefoods, etc ) however their butchers are generally too busy running a long counter with lots of customers to talk meat. [...]
