Merry Christmatt!

I work in a very creative environment, and we sometimes let our creativity get carried away with itself. A perfect example is an office prank that we performed today ( with a few days of preperation for it ). One of my staff (Matt, hence Christmatt) was away for a week. Everybody knows that when a colleague has time off a welcome back prank is all but mandatory. One of the guys started by wrapping a bunch of Matt’s stuff in newspaper, we all joined in and very soon everything from his desk and bookshelf was wrapped up.
Any normal group of people would be satisfied, but no, I had a sudden brain wave and said “Why don’t we get a Christmas tree and put all his wrapped stuff under it.” That very simple idea quickly blew out to a full on Christmas scene complete with lights, sleds, and life size frosty the snowman.
I have a tendency to take things too far and decided that you can’t have Christmas without a Christmas Ham! So I went out and bought a pickled pork leg and smoked it for about 12 hours at 100 Celcius with a simple paprika rub and hickory for the smoke. This morning I made a Pineapple and Maple Syrup glaze and baked the ham for about 3 hours at about 200 C. Unfortunately I didn’t take any photos of it in progess, but the end result teamed with a beautiful Waldorf(ish) salad and bruschetta smeared in goats cheese (Thanks Dan! ) was quite amazing!
