Jagerbomb Icecream Cake

My dearest sister told me that she wanted an icecream cake for her birthday. After googling around for something suitable for a 24 year old trendster I couldn’t find anything that fitted the bill. Suddenly a brainwave hit me, I’ll do one based off a cocktail.
Of course being an old man I have no idea what the kids drink these days but I do remember being forced to drink a Jagerbomb or two. That decided I went off to get Redbull and Jagermeister and set about making a Jagerbomb Icecream Cake.
Jagerbomb Icecream Cake
Ice Cream Base ( make two of these, one for each flavour )
- 600ml thickened cream
- 1/2 cup milk
- 3/4 cups sugar
- 4 large egg yolks
Flavourings
- 3 cans of Redbull reduced down to a syrup
- 4 shots Jagermeister and a dash of green colouring ( otherwise it’s too similar colour to the redbull ).
I made the first batch of the ice-cream base, I whisked the yolks and 1/4 cup sugar, then heating the milk and rest of the sugar and then whisking the custard into the hot milk and simmering. I cooled it in an icebath until room temp, and then mixed through the cream.
To this I added the redbull syrup and poured it into my ice-cream mixer. When thickened and frozen I transfered it into a large jelly mold and put in the freezer. Next time I would add a dash of yellow food colouring to make it look more like redbull.
The next day I made the second batch of ice-cream base and added the Jager. I put this through the ice-cream machine and then poured it on top of the redbull ice-cream.
to serve I swirled some chocolate over the icecream and put a Jagerbomb ready to drink in the middle.
