Cooking with gas
Nov 15th, 2008 by Paul
Sick of spending $20 on Charcoal every time I want to smoke some ribs, I went down to my local camping store and purchased a 3-ring gas burner and attachments. Thankfully I managed to get just the right size so that they fit into the firebox of my smoker. I also got a cast-iron pan to put the woodchips on.
I was going to get a rack and some volcanic rock as well to help distribute the temp evenly but decided to see how it went. Of course I went down to the local butcher and got some pork ribs and made a batch to test it out.
I am very impressed! with 2 of the rings on it keeps an even temp of about 110 C ( 230 F ), with all three on it kept climbing, I stopped it at 140 C ( 280 F ) and let it drop back down so I didn’t break the ribs.
The ribs turned out beautifully, with a visible smoke ring and everything. I couldn’t really taste the difference between them and charcoal smoked ribs.
