Broccoli and Gruyere Cheese soup & Chorizo Stuffed Chicken Thighs

Here’s a really nice simple soup that tastes great. I sauté half an onion and a clove of garlic in some EVO, then add a splash of wine and a chopped head and stem of Broccoli. Added enough stock to just cover the Broccoli and simmered until the Broccoli was soft, but not mush. Blended the soup with a stick mixer and added some grated Gruyere cheese. Simmered for a few minutes more then seasoned with salt and pepper and added some cream.
While the broccoli was cooking I brought some vegetable oil up to heat and fried some diced Brussel sprout leaves until crispy.
For the Chicken I deboned the leg/thigh and layed it out on some bacon and stuffed with home made Chorizo, then rolled it up and tied with butchers string. I made a rub out of Salt, Pepper, Cayenne, Onion powder, Tumeric, and Sage and rubbed it down, then smoked for about 4 hours until it hit an internal temp of 75 C.
